Bacon & Vegetable Pasta - A Recipe!

This is what my son calls 'green bacon pasta' which basically sums this recipe up nicely, It is a combination of bacon and a selection of green vegetables mixed with pasta. This is such a tasty yet inexpensive meal and its great way of adding lots of vegetables into your children's diet. So here is what you will need:
  • A pack of bacon lardons.
  • A handful of mushrooms.
  • Half a red onion.
  • 2 cloves of garlic.
  • 1/2 a punnet of cherry tomatoes.
  • A selection of green vegetables I chose courgettes, broccoli and green beans. 
  • Mixed herbs.
  • Black pepper.
  • Fresh parsley.
  • Pasta. 
  • Cheese.



























Start by putting your green vegetables on to steam, and bring a saucepan of water to the boil then adding in the pasta. Whist they are cooking fry a packet of bacon lardons until crispy, there is no need to add oil as enough fat will render out of the bacon. Add sliced courgette, onion, mushroom and garlic and continue to cook until softened.



Add your halved cherry tomatoes, some freshly ground black pepper and a 1tsp of mixed herbs and cook for a further 10 minutes. Drain your pasta and throw it into your bacon mixture making sure everything is combined and then add your steamed green vegetables on top. 


Lastly for a finishing touch add a generous amount of diced fresh parsley and a a large handful of grated cheddar cheese. 


This is such a yummy way of eating a ton of really healthy vegetables as the salty bacon juices combined with garlic really make them a joy to eat. You can use practically any vegetable you like in this....peas, peppers, a handful of spinach I like to use sun dried tomatoes usually but fresh cherry tomatoes were just as good. I use this dish as a use up whatever veg I have in my fridge kinda meal or normally whatever has been recently picked from the allotment. This is great family meal on a budget  in Aldi a pack of bacon lardons cost only 99p and pasta only 29p and even cheaper for us as we use homegrown vegetables too.
